DID YOU KNOW that the first dish presented to Her Majesty the Queen to mark the start of her Diamond Jubilee Celebrations was in fact North Ronaldsay mutton?

Celebrated chef Cyrus Todiwala OBE created his unique version of “Country Captain” – a twist on the classic shepherd’s pie – using flavoursome mutton cooked in spices, a rich red onion and tomato gravy, topped with cumin-flavoured mashed potato especially for the occasion.

And to further show his support for the OSF and North Ronaldsay sheep, Cyrus is generously sharing his exclusive recipe with us!

Cyrus has also cooked the dish on BBC1’s Saturday Kitchen and is currently preparing to serve the dish once again at his famed restaurant Café Spice Namaste, of which a donation from every sale will go to supporting the NR sheep.
